Reishi (Ganoderma lucidum) has been used in traditional Chinese medicine for more than 2000 years. The Chinese name ling zhi means "the herb with spiritual power" and is valued as the elixir of immortality. Reishi has numerous biologically active compounds, including polysaccharides such as beta-glucans and triterpenes, as well as glycoproteins, L-ergothioneine and ergosterols. Fungi are considered adaptogens, a unique class of plants that support the body's ability to adapt to external influences. The mycelial biomass is cultivated on gluten-free, steam- and pressure-stabilized whole grain oats from controlled organic cultivation. After cooling, the oats are inoculated with the pure mushroom strands and then sealed in cultivation bags with air filters to exclude impurities and to allow the cultures to breathe during the incubation. A unique fermentation process is used to develop these fermented mushrooms. This mushroom fermentation is a process in which the mushrooms digest a solid grain substrate (oats) under aerobic conditions (with oxygen) to convert the grain into fungal tissue, i.e. the mycelium. The fungal mycellium produces a number of enzymes and secondary metabolites during the fermentation process. This is an extracellular digestive process that liquefies the nutrients in the oat substrate and enables absorption through the fungal cell wall and conversion into tissue. The mycellium remains in the cultivation bags for 30 to 80 days and during this time it digests the oats completely, leaving only the solid mycelial biomass. Harvest occurs when the mushroom fruit knots develop to ensure the highest levels of nutrients. (In contrast to plants, fungi lack chlorophyll and they cannot convert light into energy (photosynthesis), but have to take in their food.) The biomass is then dehydrated to reduce the moisture content. Living enzymes, protein structure and the bioactivity of the mushroom species are preserved.
